Recipe: Turkey & Spinach Frittata

4 large eggs
60g of spinach
1 onion, finely diced
170g lean ground turkey
1 tbsp extra virgin olive oil
7g cup fresh parsley, chopped
What you need to do:
Preheat Your Oven:
Begin by setting your oven to 180°C to ensure it's hot and ready for baking.
Prepare the Egg Mixture:
In a bowl, crack the eggs and whisk them together. Season with a pinch of salt and pepper to taste. Set aside.
Cook the Turkey:
Heat a medium-sized oven-safe frying pan over medium heat. Add the olive oil and ground turkey. Use a wooden spoon to break up the turkey as it cooks. Continue until the turkey is thoroughly browned and cooked through, which should take about 8 minutes.
Sauté the Veggies:
Add the diced onion to the pan with the turkey and sauté until the onion has softened and become translucent, about 3-4 minutes.
Add the spinach and cook just until it begins to wilt, which won't take long.
Combine and Bake:
Pour the whisked egg mixture and chopped parsley into the pan over the turkey and vegetables. Stir gently to combine.
Let the eggs cook undisturbed for about 2-3 minutes, just enough to set the bottom.

Serve:
